  1. Take a deep mixing bowl and add the peeled and chopped bananas.
  2. Mash the bananas with a fork; this is part of the reason it helps to have them really ripe.
  3. To this, add the 4 eggs, the nut butter and the coconut oil and mix thoroughly. The mix will still be quite wet at this time
  4. Then add the coconut flour, vanilla, optional spices, baking powder and bicarb of soda. Mix again
  5. Add the seeds, cacoa nibs and nuts and mix again.
  6. Pre-heat the oven to 180 ℃.
  7. Taking a large spoon or ice-cream scoop, measure out the mix evenly into muffin or cupcake tins
  8. Cook for 20 minutes, remove from the oven and decorate the top of each muffin with some whole nuts and extra cacao nibs
  9. Return to the oven for 5-7 more minutes till the nuts and cacao nibs brown a bit
  10. Let cool a bit before serving
  11. These will last a week or so
